A Classic Oriental Dish

Stir-fried beef in oyster sauce recipe:
- 450g of lean beef steak.
- 1 tablespoon of light soy sauce.
- 2 teaspoons of sesame oil.
- 1 tablespoon of Shaoxing rice wine or dry Sherry.
- 2 teaspoons of cornflower.
- 3 tablespoons of groundnut oil.
- 1 red pepper, cut into chunky pieces.
- 1 green pepper, cut into chunky pieces.
- 3 tablespoons of oyster sauce.
- 2 spring onions, finely shredded as to garnish.
1.) Firstly, cut the beef steak into strips that are 5cm long and 5mm thick, making sure to cut against the grain of the meat.
2.) Place your meat in a bowl and mix with the soy sauce, the sesame oil, rice wine/fry sherry and cornflour then leaving to marinate for 20 minutes.
3.) Heat your wok until it is very hit before adding the groundnut oil. When the oil in the wok begins to smoke, quickly add your marinated beef and stir-fry for five minutes or until browned.
4.) Take the meat from the wok and drain well in a colander that is place over a bowl. Make sure to discard of the drained oil.
5.) Now, clean the wok and heat again on a very high heat before adding the peppers and cook for 3 – 4 minutes.
6.) Add the oyster sauce, bring to a simmer and then put the drained beef back into the wok.
7.) Stir and toss vigorously so everything mixes together. Place the mixture onto a serving platter and then chop and sprinkle over spring onions as a garnish. Serve immediately.
